Hsing Chen Leaves the Peninsula to Open Patisserie

After the changes at the Peninsula seemed to settle down with the highly successful addition of Lee Wolen, the star pastry chef is heading off on her own. Hsing Chen, who's been the executive pastry chef at the Magnificent Mile hotel for a year, has sights on opening a pastry shop. It will highlight American nostalgia with European flair in cakes, macaroons, pies, dessert tables, and wedding cakes. The unnamed project is slated for a summer opening.

Chen is a veteran of some of the most prestigious kitchens in the country, including The French Laundry and Country. She also owned a pastry shop in New York, Sweet Chick. Her upcoming patisserie should be quite an addition to the local sweets market.
