There's a few local distilleries in the Chicagoland area, but none focus on vodka. That's about to change with the launch of CH Distillery in late spring or early summer. One of the interesting things about CH is it's not only a distillery, it will have a small-plate bar helmed by Jesse Katzman (avec), according to Time Out Chicago. Partner Tremaine Atkinson started with home-brewing, kindling his infatuation with fermentation.
The distillery will be 8,000 square-feet, utilize Illinois grain, and also produce gin, rum, and whiskey to serve in the cocktail bar. The name CH is a double-entendre for the molecular formula for ethanol and the Chicago abbreviation. They expect to produce between 10-15,000 gallons of vodka a year solely for the local market.
