In an interview with Eater National today, Tony Mantuano talks about his new unnamed project in the Fulton's on the River space, the Spiaggia revamp, expansion, and more. Mantuano says that for the first time, he's bringing in a chef from outside his organization, although he's still finishing the deal and can't reveal the name.
The concept is inspired by his trips to London, he calls it a "roast house" and describes the space as "warm and lots of wood and copper and bricks." Although he originally didn't think the space was appealing, which he says "didn't take advantage of the river location," he says his architect is "taking out big sections of the floor, opening up all of the windows, moving the restaurant downstairs, and building a new open kitchen."
