Nearly two months after Ryan Poli's exit, a new chef will take over at Tavernita, Little Market Brasserie, and future Mercadito Hospitality projects. That chef is Guillermo Tellez, a Mexico native and Charlie Trotter's alumnus.
Tellez spent 16 years working under the deceased iconic chef, eventually becoming his chef de cuisine and opening his C restaurant in Cabo San Lucas. He returns to Chicago via Philadelphia's Red Owl Tavern at Hotel Monaco.
