Starting tomorrow, a new chef will be running the kitchen at Tony Mantuano's landmark fine dining Italian restaurant. Tonight is the last night of Sarah Grueneberg's eight-year tenure as executive chef at Spiaggia. Current chef di cucina Chris Marchino will take over beginning tomorrow.
Grueneberg, a Top Chef finalist, will be consulting for Mantuano and parent company Levy Restaurants in the meantime, saying "there are things I've committed to that I will finish out." She has been helping to open Mantuano's project in Miami, among other duties. She says the ultimate goal is to open her own restaurant but that goal is further in the distance.
The Houston native (who will stay in Chicago) says the timing was right, as a full renovation is on the docket as part of changes coinciding with the restaurant's 30-year anniversary. Those changes will now include a new chef as well.
