Logan Square and the 2300 block of North Milwaukee have landed a new business from the best-known dessert chef in town. Mindy Segal, the 2012 James Beard winner for "Outstanding Pastry Chef in the Country," is preparing to unleash her second concept. And she's writing a cookbook.
Segal signed a lease today in that exploding block in Logan Square, joining The Radler/D.A.S., the new Scofflaw project, and Chicago Distilling Company. While many details are still in development, Segal says the 6,000 square-foot space will house a bakery, cafe, and a commissary; it will have a liquor license and focus on cookies and breads—not pastries.
"There will be more cookies there than you can possibly imagine," she says. Segal is in a cookie state of mind, as she's also releasing a cookie cookbook in April 2015.
She says her Parisian honeymoon late last month cemented her plans, saying "I went to a couple bakeries (in Paris) that changed my life." She returned to Chicago with ideas of creating a bakery she calls "unexpectedly unexpected."
She's hoping to reveal her latest creations to Logan Square in summer 2014.
