Kinmont, the forthcoming sustainable-fish restaurant from Element Collective, has named Duncan Biddulph as its executive chef. Fittingly, Biddulph, who most recently spent three years heading up Rootstock and has logged time at Lula Café, cites working with fish as one of his main passions as well as a major strength.
The native Chicagoan, who studied at the Illinois Institute of Art and traveled Europe at the urging of Lula Café owner Jason Hammel to gain more experience, will be taking on the 6,200 square foot, 70-seat Kinmont when it opens mid-January, 2014.
Housed in the former Zealous space in River North, Kinmont will source local fish as well as product from both coasts, but all will be entirely sustainable.
