As part of Eater's second annual Cocktail Week, bartenders at five Chicago restaurants or bars made a special limited-edition cocktail, served just this week. Today we introduce the A Sure Thing from Craig Hiljus at Jimmy.

The final special cocktail of Cocktail Week 2013 is at Jimmy, the secluded lounge in an unmarked door behind Burke's Bacon Bar. Bar manager Craig Hiljus created a rum-based fall cocktail that fits into Jimmy's new fall cocktail menu.
Hiljus' creation, named "A Sure Thing," combines Zaya rum, Yellow Chartreuse, roasted pear puree, fresh lemon, vanilla syrup, and Allspice bitters.
"I like the natural flavors that the fall season brings, and roasting fruit is one of my favorite things to do to highlight this," Hiljus says. "In this cocktail, we combine a chewy rum with the roasted fruit notes, botanicals and spice."
The cocktail is available now for $16. Six new drinks are on the fall menu, including "Legal in Vermont" (Knob Creek, maple syrup, muddled red shiso, orange bitters, cinnamon ice).
