LAS VEGAS—Eater Las Vegas reports that Matthias Merges is setting up a Yusho outpost in Las Vegas in the Monte Carlo Resort and Casino. Yusho LV will have two dining rooms as well as an outdoor patio and will face the Strip. Construction on the 4,170-square-foot space should be done early next year. [~ELV~]
