After word broke of Kevin Hickey leaving Allium, partly to revamp Dragon Ranch with Billy Dec, Dec said the new concept would be "new American with a liquor focus." Now Chicago Magazine is reporting much more detail, including the name—Bottlefork. And yes, it will be drinking-focused, as well as "locally sourced and globally inspired," according to the Facebook page.
It sounds like most, if not all, dishes on the new menu will have some sort of liquor in it, as Penny Pollack is reporting "pickle-brined beer-can chicken thighs" and a vanilla frozen custard with stout. Drinking-focused restaurants are officially a thing—The Dawson (opening tonight), Dusek's (opened last month), and Coppervine (opening next month) are in a similar vein.
The targeted opening date is unknown at this time, so stay tuned.
