John Hagedorn will leave Sprout at the end of October to become the sous chef at The Radler and D.A.S. He says that this was the next logical step in his career, adding that it's a much better position. It will also offer him the chance to get in "on the ground floor."
"Nate Sears is a phenomenal chef and I will be managing/overseeing the day to day operations for all things back of house under his guidance, along with one of my oldest friends Sam Goldbroch, another extremely talented chef," Hagedorn says.
Having spent time at Alinea in addition to his role as chef de cuisine at Sprout, Hagedorn states that "the Radler will be a change of pace from the Michelin-starred, high intensity experience I have developed, whereas D.A.S. will provide an outlet for such high level culinary style and technique."
At the moment Hagedorn is re-designing the menu at Frog 'n Snail and will remain at Sprout until the end of the month to help in the transition to a new chef.
At press time there wasn't a response from Sprout and Frog 'n Snail's management inquiring about who will take Hagedorn's place in the Sprout kitchen or when Dale Levitski, executive chef of both restaurants, will return.
