Two more high profile hires have latched on at One Off Hospitality's Nico Osteria and will spearhead the beverage program at Paul Kahan's Italian spot in the Thompson Hotel. Matty Eggleston, who gained prominence from his work at Perennial Virant and Bar DeVille, has left Tenzing Wine & Spirits to become Kahan's head bartender. Bret Heiar (Cru Kitchen & Wine Bar, Feast) has signed on as wine director.
Eggleston will focus the bar program on "the Italian approach to drinking," hoping to create a culture revolving around all-day sipping of apertifs and low-proof cocktails. Salone Nico, the lounge space inside Nico Osteria, will serve drinks day and night. Heiar will focus his wine program on small producers and older vintages from Italy, Greece, and France.
Eggleston and Heiar join chef Erling Wu-Bower and pastry chef Amanda Rockman on what is becoming a star-studded team at Nico. The Thompson Hotel is now open, expect the restaurant inside it to open in early December.
