In a Q&A in the Tribune about his business acumen, Alinea, Next, and Aviary co-owner Nick Kokonas reiterates their local expansion plans. He tells the Trib that "we're going to do a couple more places in Chicago next year. We're looking for spaces right now on two different concepts, one of which is not an upscale concept." He also vaguely hints at location, saying "it's an area that's been done to death."
Last month, Kokonas told the blog Aviary is Haunted, as well as RedEye, that they're "planning a drinks-only place here in Chicago." Now there appears to be a second concept in the works.
