The folks who brought you two Waffles locations are jumping into the burger game. On The Bun, a fast-casual BYO burger and sausage spot, is coming next door to the second Waffles location in Lakeview, owner Alex Hernandez says. He's hoping to open it for business on Friday.
On the Bun will serve eight types of burgers (prime, wagyu, bison, chicken, veal, turkey, black bean, quinoa) in quarter-pound and half-pound sizes made from Allen Brothers meats. The veggie burgers are five-ounce patties. Four types of sausages (jumbo hot dog, pork jalapeno cheddar, Italian, Thuringer) will also be available, along with sides, salads, add-ons, and sauces.
The space holds 20 table and counter seats plus 10 on a patio in the warmer months. Hernandez describes the decor as "light carnival theme;" there's lots of bright yellows in the facade and seating. Look out for the opening by the weekend.
