The Matthias Merges mini-empire is underway. After a soft opening last night, Merges is opening his cocktail-haven Billy Sunday up to the full public tonight. Building on the success of Yusho's renowned cocktail program, Billy Sunday features a wide selection of fascinating craft drinks by mixologist Alex Bachman, like the New Western gin and rhubarb sherbet-based Against the Bliss. Billy Sunday also ramps up classic recipes, like a daiquiri and negroni, similar to Yusho's unique gin and tonic with house-made tonic water.

The interior is ready to go also. Intricate glass cabinets housing rare liquors shine out from behind the bar and surround the gleaming taps. Turn-of-the-century portraits and artwork line the cozy interior, creating an atmosphere suitable for relaxing on the back-cushioned booths with the thought-provoking libations.
