2013_1_shin.jpgWhen Shin Thompson, the chef who made his name at Bonsoirée, opens his new Japanese brasserie in the West Loop with Ryan O'Donnell, it shall be called Kabocha, as in kabocha squash. "The feel will be high-energy, lots of hustle and bustle...while still being elegant," O'Donnell tells Time Out. The menu will be a la carte but there will also be a two-seat chef's table facing a one-way mirror to the kitchen with a 9 - 10 course tasting option. [TOC]
