Stephanie Izard will never give up bread. She loves warm, freshly baked bread. And for that reason, bread will be a big part of Little Goat, her forthcoming West Loop restaurant. Izard added a bunch of info on the bread program to the restaurant's website today and noted that Little Goat Bread, a separate bread shop at the restaurant, will be open from 6 a.m. until after dinnertime.
The bakery, which will be headed by "bread guy" Greg Wade (read a Q&A with him), will be enclosed in glass so guests can see the action. In addition to Wade, Girl & the Goat's pastry chef Amanda "Minnie" Rafalski, will move across the street to the larger baking space and will also be making mini pies for Little Goat. Guests can hit up the bread shop throughout the day for coffee, croissants, bagels, sandwiches, soup and, of course, fresh-baked loaves of bread. Because Izard wouldn't have it any other way.
