Avec Names Erling Wu-Bower as New Chef de Cuisine

Just a week after news broke that longtime James Beard-award-winning chef/partner Koren Grieveson had parted ways with avec, the team at One Off Hospitality has named Erling Wu-Bower as her replacement as chef de cuisine.

Wu-Bower, who is a member of the first-ever class of the Eater Young Guns, has made a name for himself as the sous chef at Publican and Publican Quality Meats through his charcuterie program. The accomplished young chef previously worked under Grieveson at avec before moving into the sous chef position at Publican.

Now at the helm, Wu-Bower plans on keeping a number of the Mediterranean-focused wine bar's signature dishes like the chorizo-stuffed, bacon-wrapped medjool dates; the focaccia with taleggio cheese and the wood-oven-roasted pork shoulder. In the coming weeks, watch for Wu-Bower to update some current menu items while adding some new dishes.
