A few weeks ago, Eater heard rumors that Lee Wolen, who was the sous chef at the three Michelin-starred Eleven Madison Park in New York, would be heading to the Peninsula. At the time, it was speculated this former Butter and Moto chef would head up the kitchen for the hotel's lobby restaurant.
Now the Peninsula has confirmed all the rumors. Wolen has started at the hotel and will oversee the menu in the lobby as chef de cuisine. While he's currently working with the hotel's culinary team to develop new dining concepts for the restaurant, his new menus will be revealed this September.
