Bombay Spice Expanding With Fast-Casual Concept

With two more upscale yet approachable spots in Chicago and Arizona, Bombay Spice is now looking to reach the masses. "Right now it's a sit-down restaurant and we'll make it more of a Chipotle-type of concept where you build your own food," said owner Dr. John Kapoor. "We want to expand Bombay Spice into a chain and then franchise."

Kapoor, who also owns Roka Akor, said they're in the development phase now and they'll launch with a location in Tempe, Ariz. However, they're already looking for locations in Chicagoland, including in the city, Evanston and Naperville, and hope to start opening the new concept here in about six months. "There are a lot of good restaurants, but it's usually one restaurant owned by one person," he said. "My passion is to popularize Indian food."
