This weekend Lush Wine & Spirits in West Town will host Chicago’s first pop-up gastro bar on July 21 and 22. The concept will provide diners the chance to taste experimental cocktail and food pairings crafted by Mixologist Adam Seger and Chef Tim Graham. The pair first worked together at TRU more than 11 years ago and is reuniting for the unique opportunity to create a seven-course tasting menu. In crafting the menu, the two reversed the usual culinary process by having Seger create the drink first, followed by Graham developing a complimenting dish.
Guests will have the opportunity to try a number of plates including Smoked Whitefish with a Farm to Bar Welcome Punch; Mini Reubens with a North Shore Squavit and Triple Karmelit Beertail; and Chicken Cordon Bleu Poppers with a Chicken Fat Infused Red Wine ‘Surprise & Delight.’ The tasting menu is $49, or each pairing can be ordered a la carte for $9.
