Fridays must be the days for Bryce Caron news. It was exactly three weeks ago that Eater talked to Caron about his being let go from Blackbird after just a year there. Now comes the good news that the talented pastry chef, who was named a Food & Wine Best New Pastry Chef earlier this year, has landed at Graham Elliot.
Caron will work alongside chef Andrew Brochu at the River North spot; this is also the first time the restaurant will have a full-time dedicated pastry chef. Specifics on exactly what will come out of the kitchen haven't been revealed, but it'll be a mix of sweet and savory desserts. In a statement, Elliot said, "We're confident his artistic creations will play an integral part in our restaurant's quest for culinary excellence."
