Getting Her Chicks in a Row: Kristine Subido Opening Pecking Order June 16, Check out the Menu

People have been waiting for this news since Kristine Subido first announced she was leaving Wave at the W Hotel to open her own restaurant, Pecking Order. Subido has revealed to Eater she'll open her new Uptown chicken-focused restaurant on June 16 and she's getting the final, um, chicks in a row.

Subido, who is opening Pecking Order with her mother, Melinda, will offer her Filipino-style hormone- and antibiotic-free chicken marinated in a family recipe of cane sugar, tamari, garlic and vinegar and then offered either fried, grilled or roasted.

As previously noted, the 75-seat, counter-service restaurant, which will be awash in bright reds, blues and yellows with distressed furniture and picnic-style seating, will also offer a variety of sides (grilled sweet corn, green beans, rice with Lola's gravy) and sandwiches, including a brown rice veggie burger for those who don't eat meat.

Subido will offer a number of free sauces for the chicken, like banana ketchup, garlic chili vinegar, chicken liver gravy and calamansi dressing. You can also get your drink on as Pecking Order will have beer (San Miguel, Goose Island Green Line, Metropolitan Krank Shaft) and seasonal punches sold by the glass or carafe.

Leading up to the opening, Subido is holding a contest on Pecking Order's twitter feed to name the restaurant's chicken mascot. The winner will get a full chicken dinner for four. Feeling creative? Submit your name. If not, just read the menu below and get ready for chicken.
