Tony Hu Growing Chinatown Empire With Lao Yunnan

This is a big news week for Tony Hu. On Monday, Eater revealed the location and timing for Hu's forthcoming River North restaurant. Now it looks like the mayor of Chinatown, who owns Lao Sze Chuan, Lao Beijing and others, is taking over Spring World restaurant and turning it into yet another Lao restaurant.

Lao Yunnan, named for the Yunnan province in southern China, will be Hu's sixth Chinatown restaurant. Hu will retain the current chef at the Chinatown Square restaurant, but will make some menu changes before the new restaurant opens toward the end of the month.

The Trib's Kevin Pang said the restaurant will have dishes with spicy and sour flavors and may even have the province's well-known noodle dish, "rice noodles across bridge," with fried tofu, shrimp and quail eggs.
