For Piccolo Sogno Due chef Todd Stein, La Madia "perfect wood-fired pizza" is his go-to. "I think their pepperoni sets the standard. It is sliced to the perfect thickness and due to the fact that it is not encased in collagen casings it does don't curl up, which I like. I am not normally a fan of truffle oil, but it goes so perfectly on this pizza, it actually makes it better."
