Most details on Belly Q have been kept under wraps (other than it will be an Asian barbecue concept), but last night at a Curbed Network (Eater's parent company) event at Nellcôte, Bill Kim did reveal one cool aesthetic element: all the servers will wear long brown leather aprons with tan stitching—as seen on Kim in this pic. This being a barbecue spot, perhaps this means things will get a tad messy? Or will the servers just get into wearing leather?
Kim gave out small bites of a dish that will appear on the menu—chilled soba noodles with basil and marinated eggplant—and revealed that Belly Q will also have a tea-smoked duck in a Chinese water smoker served with steamed buns. So clearly the focus isn't 100 percent focused on barbecue and our curiosity is officially piqued. Stay tuned for more details.
