Coco Pazzo Names Jim Kilberg as New Exec Chef

Following the announcement that Chris Macchia would be leaving Coco Pazzo to take the exec chef position at The Florentine, owner Jack Weiss has named Jim Kilberg as its new chef.

Kilberg, who has also served as exec chef at Coco Pazzo Cafe, will start his tenure on May 1 and is currently working on a new spring menu. In addition to Coco Pazzo, Kilberg has also worked at Bice, Gioco and Il Poggiolo in Chicago and at Beccofino and Borgo di Fontebussi in Italy. "This is a chef who’s time has come," Weiss said in an email. "He is a focused, hands on chef who has seriously cultivated his talent."
