Bradford Phillips is going back home. Or at least to the restaurant team where he came from before taking on the role as exec chef at the Pump Room under Jean-Georges Vongeritchten. Phillips will re-team with LM Restaurant owners Stephan and Nicole Outrequin Quaisser to open Brasserie by LM in the former Tribute space at the Essex Inn.
Brasserie by LM, which will have dishes like boeuf bourguignon, steak frites and a breakfast croque monsieur, is targeting a March 28 opening. But that's not all the team is working on. Over the weekend they took over Wolcott's in Ravenswood and shuttered it after service Saturday night. Following a quick makeover (think fresh paint, new art), they're planning to re-open March 8 as Troquet to serve French bar fare.
Meanwhile, with Phillips' impending departure from the Pump Room this week, the restaurant has promoted executive sous chef Moosah Reaume to the exec chef position. Reaume, who has worked with Vongerichten in New York, will continue to run the JGV-created menu so things in that kitchen should transition smoothly.
