El Cid closed after 42 years, but the owner isn't walking away. Instead Jose Gonzales is opening Paladar Restaurant & Rum Bar (2115 N. Milwaukee) next month. Gonzalez bought out his business partners and, since he was born in Cuba, decided to reconcept into something closer to his heart and heritage. The restaurant will focus on cuisine from southern Cuba, have a wide variety of rum and whiskey and fresh-squeezed sugar cane juice. [Chicago Pipeline]
