Late-breaking news: Chef Todd Stein is leaving the Florentine to serve as the executive chef at Tony Priolo's forthcoming Piccolo Sogno Due. He'll remain at the Florentine through the end of April at which point he'll also bring sous chef Mark Newman, with whom he's worked for years, with him.
"The goal is to always have your hand in the right things with the right people," Stein told Eater. "There are no ill feelings between me and E2 [Hospitality, which owns The Florentine] and they've been nothing but incredible to me. When I look at my future, I want to be with Tony and (Piccolo partner) Ciro (Longobardo). This is hopefully the first of lots of things together."
