Paul Virant's Preservation Kitchen doesn't come out until April 3, but you can take a sneak peek now. The book, which focuses on Virant's amazing ability to can and pickle nearly anything while its in season, discusses recipes on how to use canned ingredients in delicious-sounding recipes (beef bacon, anyone?).
