Although most of the attention on chef Grant Achatz's restaurants has been on Next these days, this video depicting the creation and consumption of an edible helium balloon, shows that Alinea 's still got it. The Alinea chefs recommend popping the balloon with your tongue and sucking out the helium which leads to a diner's high-pitched rendition of the Star Spangled Banner.
