In advance of Publican Quality Meats opening its doors next week in Fulton Market, chef/owner Paul Kahan revealed future plans for One Off Hospitality, the restaurant company he owns with Donnie Madia, Terry Alexander and Eduard Seitan, in a Tribune cover story slated for Thursday.
In the piece, Kahan said the team hopes to open a Publican Burger at O'Hare as part of a initiative by Rick Bayless to bring more high-quality food to the airport (Bayless already has two Tortas Frontera locations there); talks are apparently in the early phase. Kahan also said the team is considering expanding its massively popular restaurant avec to New York where current chef de cuisine Koren Grieveson would also be in charge.
