2012_12_huegah.jpgFollowing a four-month hiatus resulting from a motorcycle accident, Paul Hitalenko and his partner Dirk Bowles are back at it with their ready-to-eat meal company, Hue•gah. Hitalenko and Bowles, vets of the optical industry with no formal food training, keep things seasonal and local in dishes like UK curry cauliflower with Asian long beans and black tiger shrimp with aged cheddar grits. Expanding their reach in recent months, Hue•gah meals can now be found at Provenance Food and Wine, Urban Orchard, Plenty, Olivia's Market and Artisanal in Wilmette. —Mindy Yahr Jaffe [EaterWire]
