For 15 years, Pizza D.O.C. has been cranking thin-crust pies out of Chicago's first wood-burning pizza oven. On New Year's Eve, Pizza D.O.C. will become Himmel's, a "European eatery" focusing on German-style fare. But they'll still have the pizza.
Sisters Carol Himmel and Diana Himmel-Krewer took over Pizza D.O.C. five years ago, and began sneaking schnitzels and wood-fired pork shanks onto the specials. All those dishes will be on the regular menu now, and everything on the current menu will stay (pizza, pastas, salads.) Other new dishes include a bone-in ribeye and a french onion soup, both wood-fired in the oven. Signage, logos, uniforms, and parts of the interior will change, and they're adding patio seating in two years. The grand re-opening is at 5:00 PM on New Year's Eve.
