Jake Bickelhaupt has been hosting the Sous Rising underground dinners in his Uptown home since last spring and he's getting ready to break out. The former Alinea, Charlie Trotter's and Schwa chef just launched a Kickstarter campaign with the hope of raising $125,000 to build out a Dyne, a 36-seat BYO restaurant.
Bickelhaupt has been hosting the "guestaurant" in his home as a cross between a restaurant and having a guest come over for a dinner party. People have raved about his elegant platings and the setting where Bickelhaupt is in the kitchen and his wife works the front of the house. "My quality of food is restaurant quality under my own terms in a different setting, like a dinner party," he said. "It's approachable but getting fine dining level food."
Dyne, wherever it lands, would likely be an extension of Sous Rising, where the menu evolves weekly and recently featured dishes like quail with fig, mint, raisin, hazelnut and more; and tagliatelle with confit chicken liver, crispy skin and tangerine.
"This is an alternative dining experience, but I get to do delicious high-quality food for up to 10 people," he added. "It's like their own chef's kitchen table. They can feel free to come into the kitchen and it's down to earth." Let's hope Kickstarter is successful and Dyne can exist in a similar vein.
