John Vermiglio's experience on the Bravo show Around the World in 80 Plates should give the chef a leg up for his next gig. Vermiglio, who honed his chops working alongside Art Smith at Table 52 before teaming up with Graham Elliot at G.E.B., is set to connect with another big-name chef: Matthias Merges.
Dish reports that Vermiglio will head up the kitchen at Merges' unnamed Hyde Park project Eater first wrote about last month. At that time, Merges said the cuisine would focus on Europe, and Vermiglio tells Dish it will highlight food from southern France and northern Italy, like fresh pasta and wood-fired pizza as well as roasted meats.
"I am thrilled to embark upon this opening," Vermiglio said, but declined to elaborate on the intricacies of the concept. And even though he's worked with Elliot since before G.E.B. opened, he will wrap up his work at that West Loop restaurant this week.
