Merges-111612.jpgWorking at Charlie Trotter's allowed Matthias Merges to open Yusho. It wasn't the years of fine-dining experience, but the global travel Merges did with his wife, Rachel Crowl, that inspired him to open the Japanese-influenced Logan Square spot just named Restaurant of the Year. Merges talks to Eater National about building Yusho, coming up with new concepts and working at Trotter's. He said as the restaurant evolved "it lost its way a little bit." After 14 years, Merges decided to move on because he "needed to be challenged again." [~E~]
