Can a member of a veteran Greektown restaurant family make a new concept work in Streeterville? Nick Tsoukalas, who co-owns Athena Restaurant (212 S. Halsted), just signed a lease to take over the soon-to-close P.J. Clarke's at 302 E. Illinois, and hopes to show that he can.
Tsoukalas plans to open Bellwether, an American restaurant with Mediterranean and Latin American influences, in the 7,800 square-foot, bi-level location on a corner where the River East district begins. He said they'll redesign the interior and hope to be a "neighborhood restaurant as well as a tourist restaurant," which makes sense with its close proximity to River East Art Center, Navy Pier and Michigan Avenue. Bellwether is expected to open in early 2013.
