Meg Colleran Sahs Leaving Terzo Piano Oct. 18, Sous Chef Megan Neubeck Taking Over

Meg Colleran Sahs, who has been with Terzo Piano since it opened in 2009, will be leaving her chef di cucina post officially this Thursday, Oct. 18. Colleran Sahs, who has worked alongside chef/partner Tony Mantuano for years, is going to take off some time following this Thursday's Farm to Fork event at the restaurant. She plans to travel over the next few months, including taking some time in Italy to soak up more of the food and culture.

The baton won't get passed too far as Terzo has decided to hire from within. Taking over the chef di cucina position will be longtime sous chef Megan Neubeck. Over the years, Neubeck has been responsible for the restaurant's desserts and housemade soda program. She'll work on new menu items, including pastas and rustic comfort foods, over the next few weeks coinciding with fall and winter harvests, sticking with the restaurant's commitment to working with local farmers and purveyors.

"Our menu will continue to change similarly how it's changed in the past, based on the seasons," Neubeck said. "One think I'm looking into is adding a pasta section on the menu, as I love to make them, but I think it will also round-out our guests experience with the menu. Meg and I have similar styles, which is why its been such a pleasure to work with her over the past three years. Simple food executed properly."

If you've been a fan of Colleran Sahs' cooking and want to get one last taste, you can still purchase a ticket for Thursday's Farm to Fork event. The night begins at 6 p.m. with a mini farmers market on the terrace with welcome cocktails, passed apps and a meet-and-greet with farmers from the likes of Seedling Farm, Living Waters Farm and Pinn-Oak Farm.

The night then moves into a quickfire challenge between Mantuano and Spiaggia exec chef Sarah Grueneberg. Guests will then enjoy a four-course paired wine dinner prepared by Colleran Sahs. The evening costs $95 and to reserve, call 312-443-8650 or sign up for the wait list online.
