Last week, the Pump Room and the Public hotel threw a pretty fabulous one year anniversary party, taking patrons back to Studio 54, Ian Schrager's famed New York nightclub. Exec chef Jean-Georges Vongerichten was in town for the fete and chatted with Eater about what people can expect moving forward (more local, fresh ingredients among other things) and gave a preview of one of the dishes he's most excited about: tagliatelle with Brussels sprouts and lemon zest atop a pesto made of pistachio and Thai green chili.

The dish is seemingly simple and straightforward, like much of the Pump Room menu, but definitely beautiful and flavorful. If this doesn't make you hungry, we're not sure what will.
