He's already worked in the kitchen there and he's even had his own TV show (Future Food), so is it far-fetched that Homaro Cantu could take over Charlie Trotter's now that the restaurant, with its own studio kitchen, is closed? Not necessarily. Eater got a tip that the innovative Moto chef/owner may have his sights on the Lincoln Park property, but when Eater reached out to Cantu, he simply said, "no comment ... yet." Charlie Trotter hasn't yet returned Eater's call.
Cantu has been looking for a home for his proposed food lab and brewery, Outside the Box Brewing Company, that he had talked about opening inside the Green Exhange in Logan Square. When that deal fell through, Cantu told Eater he was looking for space in Bucktown and Wicker Park, but could Trotter's possibly be the future home for his culinary experiments?
