While we await news of an official opening date for Balena, the new project from the Boka Group and Bristol teams, the restaurant's lead mixologist, Debbi Peek, got busy working on her cocktail menu, which will feature a slew of amaro-based drinks.
In this video, Peek taste tests some drinks for partners Phil Walters and John Ross to give an idea of what she'll be putting out once the restaurant opens, which looks like will happen in February. Peek's menu, which will feature about 12 cocktails at at time, will be seasonally driven and incorporate market-fresh produce and ingredients and almost all incorporate amaro, a bitter Italian spirit. One example is the Fig No. 5 (Ramazzotti Amaro, Bols Genever, fig shrub, fresh lime and OJ with orange peel) as well as the Fragola Strawberry No. 1 and Italian Sour Rosemary No. 2, which are featured, among others, in the video below.
