Chef Kevin Hickey is brewing his own beer for Allium at Goose Island. Continuing with the idea of making the new Four Seasons' restaurant more approachable, Hickey has teamed with brewmaster Jared Rouben to create a Belgian red ale that he's planning to call Allium Roses, which means "red onions." While beer does seem a little downscale for the Four Seasons, this is Kevin Hickey so you know it'll taste more like Champagne. [Grub Street]
