Fritz Pastry Closes for a Two-Week Remodel

It looks like the time has finally come for new Fritz Pastry owner Travis Schaffner to keep good on his promise to overhaul the intimate bakery. Back in late June, news broke that Schaffner, who also owns Wormhole Coffee in Wicker Park, bought Fritz from Nathaniel Meads and Elaine Heaney, who wanted to sell the time-intensive business to spend more time with their growing family. At that time, Schaffner said he had plans to rehab the space and that time has come.

Fritz closed on Jan. 2 for about two weeks. Meads and Heaney had stayed on as executive pastry chef and general manager, respectively, through yesterday's closing, but when the shop reopens, James Gray, who owned a bakery in Pittsburgh, will take over in the kitchen.
