Publican Quality Meats is finally getting close to opening its doors in Fulton Market. The 50-seat spot will open this February pending city inspections, according to a press release that just went out. When it does, it'll serve food between 10 a.m. and 6 p.m. and offer a variety of charcuterie, house-cured sausages, artisan sandwiches, prime beef and pork and other products.
The butcher shop/restaurant will also boast a market selling milk, eggs and artisan products like chutney and olive oil. The One Off Hospitality group (Donnie Madia, Paul Kahan, Eduard Seitan and Terry Alexander) have pulled together a team comprising chefs Chris Kuziemko and Erling Wu-Bower (both from the Publican) who created the menu and Kyle Davidson, who will oversee purchasing for the butcher shop.
Publican Quality Meats will source products from local farms like Slagel and Faith. The spot will have beers on draft and will have an in-house bakery that will sell bread and pastries on site and across the street at the Publican. PQM will also be able to accomodate larger parties for private events. As for the specific date on when it'll open? We'll leave that up to the city and hopefully it will be sooner than later.
