Gearing up for their fall opening, the team behind Balena—the Boka Group and the owners of the Bristol—have released a video chronicling the build out of the former Landmark space, showcasing some of the wines they may serve and basically just featuring what it's like to open a new spot.
But really what's going on in the video shows the likes of Kevin Boehm, Rob Katz, Phil Walters, John Ross, Amanda Rockman, Ian Goldberg and designer Karen Herold off 555, all carrying on in their everyday activities of their roles while exec chef Chris Pandel dons a helmet and hops on board a scooter. During the video, each person is seen plopping down into a cozy chair, ordering a pizza, like the four-cheese; margherita; or squash blossom ricotta pizzas. In the end, Pandel ties down a bunch of pizza boxes, hops on the scooter and rides around town delivering the 'zas.
Now, while Pandel likely won't be the Balena delivery guy, he does show up to drop of Boehm's pizza, who says, "Keep the change, sporto," to which Pandel replies, "Who the f*ck says sporto anymore?!" The restaurant will introduce delivery when the Lincoln Park spot opens later this year and hopes to deliver up to 150 pizzas a night. The delivery boundaries haven't been set, but if you live in Lincoln Park, Old Town or River North, we think you may be in luck.
