While the grand opening isn't set to happen until Oct. 11, the freshly revamped Pump Room, which is housed inside Ian Schrager's new Public Hotel, soft opens today. Last week, the restaurant performed practice runs for friends and family and the early reviews are positive. Chef Jean-Georges Vongerichten is in town to oversee the goings-on in the kitchen and even popped into Girl & The Goat Sunday night.
A call to the hotel confirmed it will start offering tours today and guests can request a reservation to dine at the Pump Room either in person or online. The restaurant, which will offer a "farm to table" experience, will serve breakfast through dinner and then transform into a throwback supper club at night offering small plates inspired by Indian and Asian cuisine.
Executive chef Bradford Phillips will oversee the execution JGV's well-priced menu, which was added to the restaurant's website. Look for items like "toad in the hole" with smoked salmon and spicy hollandaise; brioche French toast with roasted peach; "sunny side up" frittata with bacon, asparagus and chiles; tuna tartare with ginger dressing and spicy radishes; bacon lettuce arugula salad with carrot-miso dressing; homemade pastas and whole wheat 10-inch pizzas; the Public burger with grated farm cheddar and jalapeños; Lake Superior whitefish; and grilled beef tenderloin.
Numerous "Pump Room classic" dishes are featured at dinner, including chicken liver toast; scallop ceviche with chiles and lime; wiener schnitzel; and oven roasted lobster. Desserts will be made fresh in-house by former Boka Group exec pastry chef Kady Yon. And a special four-course chef's tasting menu is also available nightly for just $49.
