Is someone gunning for a little Michelin attention? Inovasi will end its lunch service to instead put time and attention into training its staff to take service up to another level. In a blog post titled "The Future of Inovasi," chef/owner John des Rosiers writes they'll start intensive trainings where staff will be educated on "everything from food, to beer, to wine, to farms and how they work, to spirits." Over the next 16 months, every employee will spend time in the kitchen and also get sommelier and cicerone certification. So is this just about providing better service to guests? Perhaps, but maybe a little red book may eventually want to take the train up north. [EaterWire]
