Heading into the "likely never sleeps" category, restaurateur Brendan Sodikoff is currently working on his latest project: Bavette's Bar & Boeuf. Wait, are you wondering what's going on with his Ox Diner that Eater reported on back in March? Apparently that project is now on hold. Sodikoff emailed Eater to say that due to some lease issues, they've had a schedule change. Hence, Bavette's.
Not one to kick back, Sodikoff, who also owns Gilt Bar and Maude's Liquor Bar, is busy working on Bavette's, which, he tells Time Out Chicago, will have a European steakhouse kind of feel to it, with in-house butchering, chilled seafood, terrines and a signature bone-in ribeye.
Maude's chef Jeff Pikus and Gilt chef Jason Vaughn are currently working on the menu, but a new chef will soon be announced. According to TOC, some of the menu items will include Yorkshire pudding with beef drippings; hand-cut pasta prepared cabonara-style with housemade pancetta and more. Bavette's will also have a heavy Scotch focus and an extensive wine list with a reserve list.
The 100-seat River North space will either open in late October or in early 2012 to avoid opening during the holidays. When it does, Bavette's will spawn a cubby-like walk-up window in the vein of the Gilt Bar-adjacent Doughnut Vault, but will focus on burgers, fries and shakes.
